So I was talking on twitter about my various cakes I make and promised to put the chocolate date cake on my blog:
Chocolate Date Cake
3 cups spelt flour
3 heaped teaspoons baking powder
1/2 cup custard powder (this is dried maze custard that you add milk to: http://www.edmondscooking.co.nz/baking-ingredients/custard-powder-300g)
1/3 cup coco powder
Optional 1 tablespoon stevia if you aren’t use to low sugar baking.
2 cups dried dates
125g dairy free margarine
2 cups approximate soy milk
1 teaspoon pure vanilla essence
Preheat oven to bake on 150c/301f
Line a medium cake tin base with baking paper
Sift flour, baking powder, coco & custard powder together in a bowl. Put the 2 cups of dates in a pot and cover with water – heat till boiling then slow boil/simmer for about 15 min string every-so-often until they are mostly soft.
Drain off the water (just get the excess off, its fine to still have some water in it) and add the vanilla and margarine into the pot, stir until margarine has melted.
Tip the pot into the dried and add the two cups of soy milk. Mix with a wooden spoon – sometimes this requires a little more soy until the mixture is a thick batter.
Pour into your cake tin.
Bake for approximately 1-1/2 hours until set. Inserting a knife into the middle should come free of any uncooked batter.
Take out, stand to cool enough to start eating!
