This is the most extremely odd recipe I have in my collection. My partners niece has a lot of food allergies causing her to be anywhere from anaphylactic to vomiting if she eats something her system cannot cope with. At birthdays/xmas I always try and give her a special dish that she can eat safely. (I’m working to perfect a Russian fudge recipe atm).
Vegan, gluten free, sugar free, no soy, Chocolate Pumpkin Slice.
2 cups rice flour
2 teaspoons guar gum
1 teaspoon baking soda
4 teaspoons baking powder
1 1/2 cups desiccated coconut
2 teaspoons ginger
2 teaspoons cinnamon
1/2 teaspoon nutmeg
1 teaspoon salt
1/3 cup stevia
1 1/2 cups cocoa powder
2 teaspoons pure vanilla essence
3 cups rice or almond milk
1 cup canola oil
2 cups cooked and mashed pumpkin
Preheat oven to 180C/356f
Line a medium slice tin with baking paper/brush with a little oil.
Sieve flour, baking powder, baking soda, salt, guar, cocoa and spices into a large mixing bowl. Mix in stevia and coconut. In a separate bowl combine pumpkin with milk, oil and vanilla essence and whisk/electric beater till mostly smooth.
Combine pumpkin mix with dry ingredients, mix with a wooden spoon (try not to overmix) and pour into the baking tin.
Bake for 20min aprox until the top springs back (do not overcook)
take out of the oven and cool.
When cool spread sugar free berry jam/jelly and place in the fridge.
I have found that leaving the slice for half a day for the jam to soak in makes it even yummier.
